  1. You need of cubed leftover fried chicken ( skin and breading included, deboned).
  2. Prepare of onions, large diced.
  3. Prepare of carrots (large sliced).
  4. You need of stalks celery (large sliced).
  5. You need of baby kale (chopped).
  6. Prepare of sweet peppers (small diced).
  7. Prepare of red skin potatoes (cut in bite sized pieces, skin on).
  8. It's of ground ginger.
  9. You need of jarred minced garlic.
  10. You need of whole dried rosemary.
  11. You need of dried basil leaves.
  12. You need of dried chives.
  13. You need of salt and pepper to taste.
  14. It's of homemade chicken stock.
  15. Prepare of water (more when needed).
  16. Prepare of chicken boullion cube.
  17. Prepare of potato gnocci.
  18. You need of eggs.
  19. It's of red wine vinegar.
  20. You need of topping: rye croutons and cheese.
  21. You need of plain rye bread cubes.
  22. Prepare of shredded cheese of choice.

  1. To make croutons: preheat oven to 325°F.
  2. Place bread cubes in a single layer on a baking sheet. Bake 20 minutes. Let cool, set aside..
  3. To make the soup:.
  4. In a large pot or stock pot pour in water, chicken stock, boullion cube, add carrots, onion, potato, celery, kale, sweet pepper, basil, rosemary, ginger, garlic, chives, salt and pepper..
  5. Bring to a boil. And slow boil for 1 1/2 hours..
  6. Add water as needed..
  7. Add chicken (breading and all). Slow boil another half hour or untiol veggies are tender but slightly firm..
  8. Add minimal water as needed..
  9. Add gnocci and cook until its done. Do not add anymore water, you want it to thicken up now..
  10. Wisk eggs in a bowl..
  11. Slowly stir eggs into soup..
  12. Bring to a boil and then immedietly remove from heat..
  13. Pour soup into serving bowls. Top with rye croutons and shredded cheese of choice. (I used colby jack).
  14. Serve hot and enjoy!.
